I have problem using the selecting Columns on client Binding.
I have reproduced the error using your example ClientBinding_ClientAPI.aspx,
I have added into the LayoutSettings the following settings:
ShowColumnAction="true" AllowSelectColumns="Yes" in order to use the ColumnAction and to be able to select and unselect a column.
To reproduce you can run the page and push the button 'Create Unbound Daset'; after you can deselect a column and after you have to reselect the column.

Based on my test, this issue seems to be caused by a bug. A bug report has been submitted to our developer. We will inform you if there is any update or progress regarding this issue.
The bug report has been updated and a fix will be available in the next hotfix release.
