I couldn't replicate your issue on my end. I have used zh-CN for the grid's culture and I didn't find any issue when export them to PDF version.
Could you provide me a simple working sample that replicate this issue? Or, could you provide me with a database that contains chinese language?

I have tested your project and I think the problem comes from the PDF itself.
When you export to HTML, all the columns are rendered in the output. I believe it is because PDF format doesn't have the Chinese font installed by default.
However, I have tried to look for help reference using Google and I got this link:http://www.adobe.com/support/downloads/product.jsp?platform=windows&product=10
You can try to download the language package from the link above and see how it goes. The link simply gives you the installer of Adobe reader that supports multilanguage, and I believe this is the solution for your issue.

thanks ,but when i export by text ,it happen the same problem.
When you export the data to Text format, the application used in is Notepad. By default, Notepad is used ANSI format for its encoding. ANSI format could not render chinese language, therefore when you try to save the data, it will ask you to change to Unicode encoding format in order to be able to save and view the data.
It seems that the exporting engine that we used in WebGrid doesn't support Chinese culture yet. Possibly we will enhance it in the future.
